Note from within the publication: Carrot Day is the last of the Huthhold’s four seasonal holidays to be brought to fruition. Erin Huth created the concept of Carrot Day about two years ago, and this day now joins the three other Huthian days: Pumpkin Day, Mango Day, and Sweet Potato Day. On Carrot Day, we celebrate springtime and eat a large meal, each course of which must include carrots. This is the first celebration of Carrot Day.
